Led by Chef Sidney Schutte and restaurant manager, Ralph van Hattem, Spectrum is a dynamic restaurant with a proud Dutch heritage.
Sidney discovered his passion for food and the art of cooking at a young age, during a summer job at a restaurant. At 17 years old, Sidney left his hometown in the province of Zeeland for Zuid-Limburg in the south of The Netherlands, driven by his ambition to become a chef. His training was extensive, and Sidney had the opportunity to gain experience from a wide variety of prominent restaurants such as Restaurant De Bloasbalg and De Librije in Zwolle, where he learned the true meaning of “passion” and “drive”.
For ten years, Sidney was the Executive Chef at the Librije. Under his supervision and at the age of 25, De Librije earned its coveted third-Michelin star. As Executive Chef, Sidney distinctively contributed to the creative process and development of new dishes. Meanwhile, Sidney was acknowledged as “SVH Meesterkok”, the highest
recognition that a chef can achieve in The Netherlands.
In 2009, Sidney decided to pack his bags and broaden his (culinary) horizons. His obsession for the Asian kitchen brought him to The Landmark Mandarin Oriental hotel in Hong Kong in the position of Executive Chef with Two-Michelin star restaurant Amber. In 2012 he was appointed Executive Chef and learned the tricks of kitchen management at the highest level. In 2015 Sidney was asked to come back to the Netherlands to oversee all the culinary experiences at Waldorf Astoria Amsterdam. He came back with a wealth of experience, the palette of the well-travelled and a vision. He was awarded Two-Michelin Stars within the first seven months of opening with his restaurant in Waldorf Astoria Amsterdam. He spent the next couple of years growing and evolving his own style. As of the 22nd of January 2019, Sidney renamed restaurant Spectrum in Waldorf Astoria Amsterdam.
Sidney Schutte has been ranked number 65 out of 500 Best Chefs of the World 2017, which is the highest position held by a Chef of a Dutch restaurant on this prestigious worldwide list. In 2017 Gault & Millau named him Chef of the Year in The Netherlands.
